About me

My name is Claire, I live in a rural part of Co. Meath, Ireland (about 1 hour's drive from 
Dublin). I've worked in the field of Training and Development for over ten years. My role has expanded in recent years to include Environmental, Health and Safety Awareness and performance improvement.


My mother Eileen and my daughter Robin live with me. My partner Kevin lives across the back field and spends lots of time at our place (usually feeding time). He is a Bord Bia Quality Assured Beef Farmer and is extremely passionate about his work and daily life on the farm. He rears quality Hereford and Angus cattle on undoubtly the best grassland in the country. Needless to say, his favourite dish is a prime fillet of Irish beef cooked medium and seved with homemade chunky chips...He's very adventurous not.
My passion always has been cooking and trying out new recipes. Over the years, I've collected many cookery books from a wide genre of cuisine. My first love is traditonal Irish food, followed by Italian cookery- I do like to try new dishes when I abroad too and replicate them at home. I've done some cookery courses at "Ballymaloe Cookery School" and I'd highly recommend them to anyone interested in learning more about cookery and gaining the confidence to experiment!

Along side cookery, I love to write and my dream is to write and publish a cookery book or novel someday (hopefully in the "not too distant future"!). I also am a keen sports fan (armchair, of course), I am particularly interested in Gaelic football and hurling and am a big supporter of the Meath senior football team. I enjoy supporting both International Irish rugby and the province of Leinster. We had a great 2014 with Ireland winning the the RBS Six Nations Rugby! You may well ask, what has sport got to do with cooking...well for me, both inspire me to do greater things. So, it doesn't really matter what we get our inspiration from, once we get inspired!

Inspiration for my blog

It still amazes me when I chat to so many people who either cannot cook or have little or no interest in cookery. I suppose nowadays, everything is readily available in Supermarkets. The really interesting thing is that these people all LOVE food so there’s a passion there but it seems to be hidden.. My Irish Kitchen Blog aims to help my readers to discover their hidden potential and get some inspiration from my easy to follow recipes… For this reason, I am going to post some very simple baking treats and savoury dishes. I will build my repertoire over time (so I won’t overwhelm you). I ask you to comment on what types of dishes you would love to conquer and I can add recipes and step by step photographic instructions to help you along. So come on this journey with me and I will be your kitchen angel; soon you will have great culinary life skills that you may previously only have dreamt about!
